Risotto Frutti di Mare


Mama mia!
I believe that this is my lucky dish ever, cause believe it or not I wouldn't ever get the experiences that I found thru this exceptional video. How that this idea came into my head? I remember that I was looking for something with culture. No necessary mine. Something with history. When I started to live in Buenos Aires I met Italian cuisine. And this style and technique blowed my mind. I mean, any Peruvian person could criticize me about my connexion with my country. I'm sorry but, I don't care at all. In fact, it´s like the only idea that was possible for the peruvian little proud was peruvian food with peruvian ingredients. Indeed, "if you are a peruvian chef,  you must cook peruvian food to show other people that is the best one". I just f***ing laugh about that. 




Is powerful the idea of being peruvian and looking for some new flavors. At least for me in my little world. All my trips thought me that in each city I could find amazing food, include food that I never thought before. For example, Thai food or Arabic. There is no better food or worst. It ´s too personal.


So I decided to look and think different like i always did. And with this dish I really connected with my heart. The ritual. The way of move the flavors. The possibilities. I wanted something from the sea. And there were my roots. In the sea. Suddenly, childhood images started to come into my eyes and showed me the beautiful gratitude for the ocean, the sand, the sun, the weather, the waves. The ecosystem. This risotto come from the sea. And has mediterranean flavors because of the exotic spices that I used. This dish opened me doors.
