QUINOTTO Andean Nouveau Cuisine
This is ANDEAN NOUVEAU CUISINE (Novoandina). A mix of unbelievable & eccentric Andean ingredients (like QUINOA) combined with mediterranean techniques and flavors.
I am fascinated in make risotto. It´s my ritual. For argentine people is the "Asado, for peruvians is "ceviche" For me, is risotto. Why? Because this meal needs time to be cooked. This process allow me to share with people. Also needs patience, a lot of patience. And for me is what I need. PATIENCE. Just think about it... Maybe is what you need too.
The quinoa is an Andean cereal consumed in all the Andes Mountains. And is planted in countries like PerĂº, Bolivia, Colombia, Chile and Ecuador. This tasty meal has not GLUTEN. Therefor is a nutritious food for celiac people. Whats my secret ingredient? Well, I added some Sweet Potato to make it warmer.
My history with quinua starts with this insight: When you have it, you don't want it. And when you want it, well, I needed to leave my own country to light my brain and try some peruvian culture in my kitchen. But, obviously. For me, the fun is in the mixture. So here is my culture mixed up with Italian technique.
