Pumpkin RISOTTO

Like a risotto lover I must look for some innovate ingredients. After all everything is done. So I focus my mind in how I am going to do it. I mean, I think that Nike should change his slogan to How are you gonna just do it? F*** advertising. 


However, cook this dish was a great technique experience. And something that I am very interested right now is in organic food. In natural meals. Because with this, not so much recent concept, we could increase our life's quality. I say this all the time. We could get a great life style thru money, but a better life's quality depends directly of the city where we live. But also depends of our traditions and customs.


This is a dish that shows my style being a LimeƱo who lives in Buenos Aires, who used to live a time in Paris and who loves to travel. So, the question is why I am not making peruvian cuisine? Why I am not showing this fashion cuisine to the world?  That's a good question doesn't it? Again, screw it all!  I am who I am because of the peruvian cuisine, but also cause of my obsession of find different ingredients and cook something CREATIVE.  

I love ceviche. But, that's not all the peruvian cuisine. Indeed, there are some other fascinate dishes like CHIFA or Andean Nouveau Cuisine, that blows my mind.
Nonetheless, if I want to cook something I will light my fire with some eccentric and organic flavors.
